This week we’re talking about Fitness. First we’ll pull a card from the Recipe Box to make some healthy grits. We’ll enter the School Box to find out how Hope Mullinax stays fit. Next, we’ll cover some great apps to keep you fit in the App Box. We’ll watch “Cheers for Chubby” in the Idiot Box. Finally, we’ll pull out some questions you submitted through the Idea Box.

Healthy Grits Recipe
1 cup grits
2 cans coconut milk
1/2 small onion
2 cloves of garlic
Equipment: saucepan, knife, cutting board, spatula
1) Chop onion and garlic then add to saucepan. Heat on medium until they begin to brown.
2) Add coconut milk and curry powder to saucepan, mix, then bring to a boil. **Be careful! This will go from barely bubbling to boiling over QUICK**
3) Stir in grits and lower heat to simmer for 10-15 minutes. Stir occasionally to keep from burning.
4) Remove from heat and add salt and/or additional curry to taste.
